Description

Delightful and colorful antipasto skewers featuring marinated mozzarella, cherry peppers, artichoke hearts, pickled green beans, salami, and Kalamata olives. These easy-to-assemble skewers are perfect for entertaining, offering a mix of flavors and textures served cold with a flavorful marinade.

Ingredients

Scale

Cheese & Vegetables

  • 12 ounces marinated mozzarella balls
  • 16 ounces cherry peppers, drained
  • 14 ounces quartered marinated artichoke hearts, drained
  • 1 jar pickled green beans, drained and cut in thirds
  • 16 Kalamata olives

Meat & Others

  • 1 package thinly sliced salami
  • 16 5-inch wooden skewers

Instructions

  1. Prepare the mozzarella balls: Remove the marinated mozzarella balls from their marinade carefully and reserve the marinade for serving alongside the skewers to enhance flavor and add moisture.
  2. Assemble the skewers: Take a wooden skewer and thread on one cherry pepper, followed by a quartered marinated artichoke heart, then fold a slice of salami four times and add it, next add a piece of pickled green bean, then a marinated mozzarella ball, and finish off with a Kalamata olive on top. Repeat this assembly process with all remaining ingredients and skewers.
  3. Chill before serving: Once all skewers are assembled, cover them with plastic wrap or place them in a container and refrigerate until ready to serve. When serving, offer the reserved cheese marinade alongside the skewers for dipping or drizzling.

Notes

  • Make sure to drain the vegetables well to avoid soggy skewers.
  • Salami slices should be folded neatly to fit well on the skewers and create a nice texture contrast.
  • The reserved marinade adds a delicious tang and enhances the overall flavor; do not discard it.
  • These skewers are best served chilled but can be brought to room temperature if preferred.
  • Perfect appetizer or party snack that requires no cooking.
