Ingredients
Scale
Brownie Base
- 1 box brownie mix
- 2 eggs (or as required by mix)
- 1/2 cup vegetable oil (or as required by mix)
- 1/4 cup water (or as required by mix)
Pecan Topping
- 3/4 cup light corn syrup
- 3/4 cup brown sugar
- 1/4 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped pecans
- 1/2 cup whole pecans (optional, for garnish)
Instructions
- Preheat and Prepare Pan: Preheat your oven according to the brownie mix instructions and grease or line a 9×13-inch baking pan with parchment paper to prevent sticking.
- Make Brownie Batter: Prepare the brownie batter by mixing the boxed brownie mix with eggs, vegetable oil, and water as directed on the package until smooth.
- Bake Brownie Base: Pour the prepared batter into the pan and bake for about 20 minutes, until the top is just set but the center remains soft to create a partially baked foundation.
- Prepare Pecan Topping: While the brownie base bakes, combine light corn syrup, brown sugar, melted butter, eggs, and vanilla extract in a bowl. Mix until smooth, then fold in the chopped pecans evenly.
- Assemble and Add Topping: Remove the brownies from the oven carefully and pour the pecan topping over the partially baked brownies. Spread it evenly and optionally arrange whole pecans on top for garnish.
- Finish Baking: Return the pan to the oven and bake for an additional 25–30 minutes, or until the pecan topping is bubbling and mostly set.
- Cool and Chill: Allow the brownies to cool completely at room temperature, then chill them in the refrigerator for 1–2 hours. This helps the bars set fully and allows for cleaner slicing.
Notes
- Using parchment paper for lining the pan ensures easier removal and cleaner edges when slicing.
- Adjust baking time if your oven runs hot or cold; brownies should be slightly soft in the center after the first bake.
- For a richer flavor, toast the pecans lightly before adding them to the topping.
- These brownies can be stored covered in the refrigerator for up to 4 days.
- Optional whole pecans on top add an attractive finish and extra crunch.
