Ingredients
Scale
Base
- 2 cups Greek yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Topping
- 1/2 cup dark chocolate chips
- 1/2 cup chopped almonds
Instructions
- Prepare the yogurt mixture: In a mixing bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir well until the mixture is smooth and evenly blended.
- Form the coins: Using a spoon or spatula, scoop out small portions of the yogurt mixture and shape them into coins approximately 1 inch thick on a parchment-lined baking sheet to prevent sticking.
- Freeze until solid: Place the baking sheet in the freezer and allow the yogurt coins to freeze for at least 2 hours so they become firm and hold their shape.
- Melt the chocolate: While the coins are freezing, melt the dark chocolate chips in the microwave in short intervals, stirring in between, until smooth and fully melted.
- Decorate the coins: Remove the frozen yogurt coins from the freezer and drizzle the melted chocolate over them evenly. Then sprinkle with the chopped almonds for extra crunch and flavor.
- Set the toppings: Return the decorated coins to the freezer and freeze for an additional 30 minutes to allow the chocolate to set solid before serving.
Notes
- You can substitute honey with maple syrup for a vegan-friendly option.
- Use full-fat Greek yogurt for creamier texture or low-fat for a lighter option.
- Ensure the yogurt coins are fully frozen before adding melted chocolate to avoid melting.
- Store leftover coins in an airtight container in the freezer for up to 1 week.
- Chop the almonds finely if you prefer smaller pieces.
