Instructions

  1. Preheat Oven: Preheat your oven to 325°F (165°C) and line an 8×8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, dried fruits, shredded coconut, chia seeds, cinnamon, and salt. Stir until thoroughly mixed.
  3. Warm Wet Ingredients: In a small saucepan over low heat, gently warm the almond butter and honey (or maple syrup) while stirring constantly. Once blended, remove from heat and stir in the vanilla extract.
  4. Combine Mixtures: Pour the warm almond butter mixture over the dry ingredients. Mix well until all the oats and nuts are fully coated.
  5. Press Mixture into Pan: Transfer the mixture to the prepared baking dish. Use a spatula or the back of a spoon to press it firmly and evenly into the pan.
