Ingredients
- 1 cup quinoa (tri-color or white)
- 1 ½ cups water or broth
- 1 Tbsp. olive oil or butter
- ¼ – ½ tsp. salt (to taste)
Instructions
- Rinse Quinoa: Rinse quinoa thoroughly in a fine mesh strainer under cold water for about 1 minute, or until the water runs almost clear. This removes the natural coating called saponin, which can taste bitter.
- Add Ingredients to Instant Pot: Place the rinsed quinoa, water or broth, olive oil or butter, and salt into a 6-quart Instant Pot. Stir gently to combine the ingredients evenly.
- Seal the Instant Pot: Secure the lid on the Instant Pot and ensure the pressure release valve is set to the sealed position to prepare for pressure cooking.
- Pressure Cook: Set the Instant Pot to cook at high pressure for 1 minute. Keep in mind that it will take approximately 5-10 minutes for the Instant Pot to come up to full pressure before the cooking time starts.
- Natural Pressure Release: When the cooking timer goes off, allow the pressure to release naturally for 10 minutes. This helps the quinoa finish cooking gently and absorb moisture evenly.
- Release Remaining Pressure: After 10 minutes, carefully move the pressure release valve to venting to expel any remaining steam. Wait until the float valve drops and then open the lid carefully.
- Fluff and Serve: Use a fork to gently fluff the quinoa, separating the grains. Serve immediately as a wholesome side dish or use in your favorite recipes.
Notes
- Rinsing quinoa is important to remove bitterness caused by the natural saponin coating.
- You can substitute water with vegetable or chicken broth for extra flavor.
- Adjust salt to your taste preferences.
- Leftover quinoa can be stored in an airtight container in the refrigerator for up to 5 days.
- Reheat quinoa with a splash of water to restore moisture.
