- 2 tbsp Salt (Kosher salt for boiling water.)
Sauce & Seasoning
- 1/4 cup Olive Oil (Can substitute with avocado oil.)
- 2-3 cloves Garlic (Finely minced.)
- 1/2 cup Parmesan Cheese (Grated.)
- 1 tsp Black Pepper (Freshly ground.)
- 1 unit Fresh Lemon Juice (Squeezed from one fresh lemon.)
- 1 handful Fresh Herbs (Optional, such as basil or parsley.)
Instructions
- Boil Water and Salt: Bring a large pot of water to a boil and add salt generously to season the pasta water.
- Cook Pasta: Add the lemon pasta to the boiling salted water and cook until al dente, about 8-10 minutes. Before draining, reserve some pasta water to use in the sauce.
- Sauté Garlic: In a skillet, heat olive oil over medium heat and sauté the finely minced garlic until fragrant, which should take about 1-2 minutes. Be careful not to burn the garlic.
- Toss Pasta with Garlic Oil: Add the drained pasta to the skillet with the garlic oil and toss well for about a minute to coat the pasta evenly.
- Add Lemon Juice and Pasta Water: Pour fresh lemon juice over the pasta and add reserved pasta water as needed, stirring to create a creamy, silky sauce consistency.
- Finish with Parmesan and Seasoning: Stir in grated Parmesan cheese and season with salt and freshly ground black pepper to taste. Toss until the cheese melts into the sauce.
- Add Fresh Herbs: Optionally, sprinkle in fresh herbs like basil or parsley for extra brightness and flavor before serving.
