Description

A bright and flavorful zesty lemon pasta that combines the freshness of lemon juice with savory garlic, Parmesan, and herbs, delivering a simple yet utterly satisfying meal ready in just 30 minutes.

Ingredients

Scale

Pasta

  • 10 oz Lemon Pasta (Any pasta variety can work.)
  • 2 tbsp Salt (Kosher salt for boiling water.)

Sauce & Seasoning

  • 1/4 cup Olive Oil (Can substitute with avocado oil.)
  • 2-3 cloves Garlic (Finely minced.)
  • 1/2 cup Parmesan Cheese (Grated.)
  • 1 tsp Black Pepper (Freshly ground.)
  • 1 unit Fresh Lemon Juice (Squeezed from one fresh lemon.)
  • 1 handful Fresh Herbs (Optional, such as basil or parsley.)

Instructions

  1. Boil Water and Salt: Bring a large pot of water to a boil and add salt generously to season the pasta water.
  2. Cook Pasta: Add the lemon pasta to the boiling salted water and cook until al dente, about 8-10 minutes. Before draining, reserve some pasta water to use in the sauce.
  3. Sauté Garlic: In a skillet, heat olive oil over medium heat and sauté the finely minced garlic until fragrant, which should take about 1-2 minutes. Be careful not to burn the garlic.
  4. Toss Pasta with Garlic Oil: Add the drained pasta to the skillet with the garlic oil and toss well for about a minute to coat the pasta evenly.
  5. Add Lemon Juice and Pasta Water: Pour fresh lemon juice over the pasta and add reserved pasta water as needed, stirring to create a creamy, silky sauce consistency.
  6. Finish with Parmesan and Seasoning: Stir in grated Parmesan cheese and season with salt and freshly ground black pepper to taste. Toss until the cheese melts into the sauce.
  7. Add Fresh Herbs: Optionally, sprinkle in fresh herbs like basil or parsley for extra brightness and flavor before serving.

Notes

  • Reserve pasta water to help create a creamy sauce without cream.
  • Use freshly grated Parmesan for the best flavor and meltability.
  • Add herbs at the end to maintain their fresh aroma and color.
  • Adjust lemon juice and pasta water quantity depending on your desired sauciness.
  • Can substitute olive oil with avocado oil for a milder taste.
