Ingredients

Scale

Chicken and Spice Mix

  • 3 large chicken breasts
  • 1 tbsp olive oil
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp salt

Filling

  • 8 oz (1 block) cream cheese, softened
  • 3 tbsp sour cream
  • 1/3 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 3 green onions, minced
  • 2 tbsp cilantro, minced
  • 1 lime, juiced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese

Assembly and Serving

  • 1618 small flour tortillas
  • 1/2 cup sour cream (for serving)
  • 1 tbsp cilantro, minced (for serving)
  • 1/2 lime, juiced (for serving)
  • 1/4 tsp garlic powder (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get ready for baking the chicken breasts.
  2. Season and Bake Chicken: Coat the chicken breasts with olive oil and sprinkle with 1/4 tsp chili powder, 1/4 tsp garlic powder, 1/4 tsp cumin, and 1/4 tsp salt. Place the chicken on a baking sheet and bake in the oven for 20-25 minutes, or until the chicken is fully cooked and no longer pink inside.
  3. Prepare Filling: Once the chicken is cooked, shred it finely. In a large bowl, combine the shredded chicken with softened cream cheese, 3 tbsp sour cream, salsa, 1 tsp cumin, 1 tsp chili powder, 1 tsp garlic powder, 1/2 tsp coriander, 1/2 tsp salt, minced green onions, minced cilantro, lime juice, and both shredded cheddar and pepper jack cheeses. Mix thoroughly until well combined.
  4. Assemble Taquitos: Lay out the small flour tortillas and evenly distribute the chicken filling in each. Roll each tortilla tightly around the filling and place seam-side down on a baking sheet lined with parchment paper to prevent sticking.
  5. Bake Taquitos: Increase the oven temperature to 425°F (218°C). Bake the assembled taquitos for 15-20 minutes, or until they turn crispy and golden brown on the outside.
  6. Serve: Serve the taquitos hot with a side of sour cream mixed with minced cilantro, a splash of lime juice, and a sprinkle of garlic powder for added flavor.

Notes

  • Use small flour tortillas for authentic taquito size and easy rolling.
  • Ensure cream cheese is softened to blend smoothly into the filling.
  • Adjust spice levels to taste by increasing or reducing chili powder and garlic powder.
  • For a crispier texture, you can spray taquitos lightly with cooking oil before baking.
  • Leftover taquitos can be refrigerated and reheated in the oven or air fryer to maintain crispiness.
