Ingredients
Scale
Fritter Batter
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2/3 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- 1 1/2 cups peeled and diced apples (such as Honeycrisp or Granny Smith)
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin pan or line it with baking cups to prevent sticking and make removal easy.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg until well combined.
- Mix Wet Ingredients: In another bowl, whisk the milk, eggs, vanilla extract, and melted butter together until the mixture is smooth and evenly blended.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir gently just until the batter comes together—avoid overmixing to keep the fritters tender.
- Fold in Apples: Carefully fold the peeled and diced apples into the batter, ensuring they are evenly distributed without breaking them down.
- Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full for proper rise.
- Bake Fritters: Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean, indicating they are fully cooked.
- Prepare Glaze: While the fritters bake, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until the glaze is smooth and pourable.
- Glaze Fritters: Once the fritters are slightly cooled but still warm, either dip the tops into the glaze or drizzle the glaze over each fritter to add sweetness and moisture.
- Serve Warm: Enjoy the baked apple fritters warm for the best taste and texture.
Notes
- For extra apple flavor and a caramelized touch, sauté the diced apples in 1 tablespoon of butter and 1 tablespoon of brown sugar before folding them into the batter.
- These fritters are best enjoyed the same day but can be stored covered at room temperature for up to 2 days without losing freshness.
